Easy Beef and Pepper Stir-Fry Recipe with Pineapple Rice

If you ask most kids what they want for dinner the answer is always unanimous! Beef Stir Fry!

The below stir fry recipes are our dinner favorites.  What makes this dish really amazing is the flavorful pineapple rice!   If you’ve never tried pineapple rice before you will love it!

When the flavors are all  blended together they kind of sing their own song!

Serve This Delicious Beef Stir-Fry over Pineapple Rice

Ingredients
  • 1 lb. top round steak
  • 1/2 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 3 teaspoons cornstarch
  • 2 teaspoons sugar
  • 2 teaspoon rice wine vinegar
  • 2  medium peppers, cored and sliced thin  
  • 2 green onions, sliced thin
  • 2 cloves garlic, minced
Sauce:
  • 1 cup beef broth
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon dried ginger
  • 1/2 tablespoon cornstarch
Instructions
  1. Slice the beef using a sharp knife. This works best if you slightly freeze the beef and slice against the grain.

  2. In a medium bowl, whisk together the soy sauce, cornstarch, sugar, and rice wine vinegar.  Add the meat and stir together well.  Let marinate for 1/2 hour.
  3. Heat oil in a large skillet.  Add the beef and stir-fry for about 2 minutes.  Add the red pepper, green onions and garlic to the skillet with the beef and continue to stir-fry for an additional 3-4 minutes.
  4. Mix  the sauce ingredients in a small bowl and add to the skillet with the beef and pepper.  Continue to stir and simmer for about 2-3 minutes on low heat.

PINEAPPLE RICE

1 cup Jasmati rice (can use white rice as well)
1 small onion, chopped fine
2 tablespoons butter
2 cups chicken broth
1 (8 oz.) can Dole crushed pineapple in 100% juice
1 tablespoon soy sauce

In a medium sauce pan, cook onions in butter for about 2 minutes or until onions are soft.  Lightly salt onions. Add rice and stir through the onions, cooking for an additional minute.  Add chicken broth, can of crushed pineapple and soy sauce.  Stir and bring to a light boil.  Reduce heat and simmer for 20 minutes.  Chop some additional green onions and add to the cooked rice.

TAKEOUT STYLE BEEF STIR-FRY AND BROCCOLI

While it may not be authentic, few foods satisfy a craving like American takeout-style Asian cuisine. This recipe for stir fry beef results in tender, rich dish bursting with flavor, and best of all, it can be prepared in advance and cooked in a matter of minutes.

The recipe below makes enough for about 4 small servings:

 

List of Ingredients:

1 pound of skirt steak, thinly sliced against the grain
3 garlic cloves, minced fine
1 pound of broccoli
3 tablespoons vegetable oil, divided

For the Marinade:

2 teaspoons soy sauce
2 teaspoons brown sugar
1 teaspoons cornstarch
1/2 teaspoon sesame oil

For the Sauce:

1/2 cup oyster sauce
1 tablespoon soy sauce
1/2 cup chicken stock
2 teaspoons brown sugar
2 teaspoons cornstarch
1/2 teaspoon ground or freshly minced ginger

Instructions:

Begin by combining the beef and marinade ingredients in a large bowl. Toss thoroughly until the meat is well-coated, then set the bowl aside for 15-20 minutes.

In another bowl, combine the ingredients for the sauce and stir until the mixture is fully incorporated. The cornstarch may settle at the bottom, so stir it again before using it. Set this bowl aside as well.

In a large wok or skillet, heat a tablespoon of the vegetable oil over high heat until the oil is shimmering. Add half of the beef and let it cook on one side without moving it for about a minute, or until browned. Then toss the beef and stir constantly until the meat is fully browned on both sides. Transfer the first batch of beef to a bowl or plate and set it aside. Add another tablespoon of oil to the wok or skillet and cook the second batch of beef in the same way, then set it aside.

Add the final tablespoon of vegetable oil, then add your vegetable or vegetables of choice, stirring constantly for 1-2 minutes until bright green and lightly browned in spots. Add the garlic and stir until fragrant, about 30 seconds.

Return the beef to the wok or skillet, and then pour in the sauce mixture. Continue to stir constantly, until the sauce has thickened and fully coated the meat and vegetables. Once the sauce has thickened, remove from heat and serve immediately.
