Skinny Chicken Parm – Low in Calories and Fat

We love using a box of Pomi chopped tomatoes for this recipe. The tomatoes are from Italy and are some of the freshest tomatoes we’ve tasted. They are reasonably priced and a nice choice for this Parmesan dish.

No Fuss and Delicious SKINNY ME Chicken Parm that is easy to prepare.
- 1-1/4 lb. boneless chicken breasts, thin sliced
- 2 teaspoons olive oil
- 1 (26 oz.) box Pomi chopped tomatoes
- 1/2 tablespoon flour
- 1/2 tablespoon Parmesan Cheese
- 1/2 cup Mozzarella cheese
- 1/2 teaspoon salt
- 1-1/2 teaspoons garlic powder, divided
- 1 teaspoon sugar
- 1 teaspoon paprka
- 1 teaspoon of each dried oregano and dried basil

Preheat oven to 350 degrees and spray a casserole dish with nonstick spray.

Sprinkle both sides of the chicken with salt, paprika, and 1/2 teaspoon of the garlic powder.

Mix together the flour and Parmesan cheese and lightly dust both sides of chicken with a thin layer.

Spray a skillet with non stick spray and bring to medium-high heat. Add the oil and the chicken to the skillet.

Cook each side of chicken until well browned. About 3-4 minutes per side.

Pour chopped tomatoes into a 9 x 13 casserole dish and stir in the basil, oregano, remaining garlic powder, sugar and a little salt & pepper.

Lay browned chicken pieces on top and spoon over a little bit of the sauce.

Sprinkle with Mozzarella cheese and bake for 20 minutes.
To make the best chicken parm, start by pounding the chicken thin. Lay the chicken breasts between two sheets of waxed paper. Pound with the flat side of a meat mallet or rolling pin to an even 1/4-inch thickness.
Tender browned chicken and juicy tomatoes – all topped with shredded Mozzarella cheese. We also love to toss in strips of fresh basil when this dish is almost finished baking.
