These kid friendly dinners are easy to prepare and easy to clean up.  Moms and Dads will also enjoy the kids meals. 


EASY KID'S MEALS

It's so easy to make meals for kids fun.  Try the meal below, adding fresh steamed broccoli and small white potatoes.  Make sure to have plenty of ranch dressing and let the kids dip their entire dinner including the broccoli!

EASY HEALTHY CHICKEN FINGERS

1 pound chicken tenders
Canola oil cooking spray
1/2 cup sliced almonds
1/4 cup  flour
1 1/2 teaspoons paprika
1/2 teaspoon garlic powder
1/2 teaspoon dry mustard
1/4 teaspoon salt
1/8 teaspoon freshly ground pepper
1 1/2 teaspoons extra-virgin olive oil
4 eggs
1 pound chicken tenders


Preheat oven to 475°
Spray baking sheet with cooking spray.
Place almonds, flour, paprika, garlic powder, dry mustard, salt and pepper in a food processor; process until the almonds are finely chopped and the paprika is mixed throughout. Drizzle in the oil and blend until combined. Transfer the mixture to a shallow dish.

Whisk eggs in a second shallow dish. Add chicken tenders and turn to coat. Transfer each tender to the almond mixture; turn to coat evenly. Place chicken on the sheet and coat with cooking spray; turn and spray the other side.

Bake the chicken fingers until golden brown, crispy and no longer pink in the center, 20 to 25 minutes.

Makes 4 servings

QUICK & EASY CHICKEN PARMESAN

4-6 frozen breaded chicken patties
1 (28 oz.) jar of your favorite spaghetti sauce
1 cup shredded mozzarella cheese
1/2 cup shredded Parmesan cheese
1 box thin spaghetti

Preheat oven to 400 degrees.

Cook the spaghetti noodles according to package directions.  In a small saucepan, heat the sauce until it comes to a light boil; reduce heat and keep warm until ready to use.

While the noodles are cooking, place chicken patties in a casserole dish and bake for 10 minutes.  Flip patties over once and continue baking for another 8 minutes.  Remove from oven and pour hot sauce over patties and top with mozzarella cheese.  Return chicken to the oven and continue baking a few more minutes or until the cheese is melted.

Serve over warm pasta and sprinkle with Parmesan cheese.

kid's meal

KID'S CRUNCHY BAKED CHICKEN

3-4 lbs. chicken thighs & legs
1 egg
1 tablespoon milk
1 (2.8 oz.) can french-fried onions
3/4  cup grated Parmesan cheese
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt

1/4 cup butter, melted

Preheat oven to 350 degrees.

Place the french-fried onions in a large resealable bag and crush with a rolling pin.  Add parmesan cheese, paprika, garlic powder, and salt; shake well to combine.

Combine egg and milk in a shallow bowl and whisk lightly.  

Dip each chicken piece in egg then place in the bag and shake until well coated with onion mixture.

Place chicken in a greased 13 X 9" baking pan and drizzle with butter.

Bake uncovered for one hour.
