This easy meal simmers all day and goes on the table quickly.

SIMPLE
YET DELICIOUS
DINNERPLANNER.COM'S CHICKEN IN APPLE
CREAM SAUCE (Simply Delicious)
1
lbs. boneless chicken breast, thin cut
1 Tablespoon olive oil
1 Tablespoon of butter
1/2 teaspoon thyme leaf
salt & pepper
2 small onions, diced
3 cloves garlic, minced Cream
Sauce:
1 cup apple juice
1/2 cup of half & half
2 Tablespoons Dijon mustard
1/2 Tablespoon soy sauce
1/2 Tablespoon cornstarch
1/4 teaspoon salt Make sure the
chicken breasts are thin by either slicing
the breasts on the diagonal with a sharp knife,
or pounding them thin. Sprinkle
chicken with salt, pepper and thyme. Sauté chicken breasts in olive
oil and butter until both sides are lightly browned. Remove chicken
to a plate. Sauté onions and garlic until onions are
soft. In a medium bowl, mix together the sauce
ingredients. Pour sauce mixture into skillet with the onions and
bring to a light simmer. Add chicken back to the pan and simmer for
15 minutes. Stir sauce a few times while cooking.
THIS CHICKEN IS WONDERFUL SERVED
OVER EASY RICE PILAF
EASY RICE
PILAF 1 small onion diced,
2-3 cloves of garlic, diced
1 Tablespoon butter
1 (14.5 oz) can of chicken broth
1/2 Tablespoon soy sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup white rice (uncooked) Sauté
onions and garlic in butter until soft. Add chicken broth, soy
sauce, salt, and pepper. When broth starts to get warm, stir in
rice. Bring to a light boil; cover and reduce heat. Simmer on
low for about 18 minutes. Do not lift the lid or stir the rice while
cooking.
SIMPLE SKILLET DINNER ~ More Easy Meals ...
EASY SKILLET CHICKEN
& RICE
1 lb. chicken tenders, sliced (or boneless chicken)
1 small onion, diced
1 tablespoon canola oil
1 tablespoon butter
1 cup white rice (uncooked)
1 (14.5) oz. can chicken broth
1 tablespoon dried parsley
1/4 teaspoon salt
1 cup shredded cheddar cheese Lightly
salt and pepper chicken. Sauté chicken and onion in oil until
chicken is golden brown. Remove chicken to a plate and sauté
rice in butter for 2 minutes in the same skillet. Add chicken
broth, dried parsley, and salt to the rice. Stir and
bring to a light boil. Add chicken back to the skillet
on top of the rice. Reduce heat; cover and cook for
18-20 minutes. Sprinkle cheese on top of chicken
and rice and stir through. Cover and let sit for a
minute until cheese melts. YUM!
This chicken recipe uses just a few ingredients and takes very
little time. |

20 MINUTE PIZZA SKILLET ROTINI
1 lb. lean ground beef
1 small onion, diced
2 teaspoons minced garlic
2 Tablespoons Worcestershire sauce
1/4 sliced pepperoni, diced
1 teaspoon dried oregano
salt & pepper to taste
1 Tablespoon flour
1 (6 oz.) can tomato paste
2 (14 oz.) cans beef broth
1 (14.5) can diced tomatoes
1 box Barilla MINI rotini
1 cup shredded mozzarella cheese
Using a large skillet, sauté ground beef,
Worcestershire, onions, garlic, oregano, salt, and pepper until
browned. Add the pepperoni the last couple minutes of browning the
ground beef. Drain off any grease. Stir tomato paste
through the browned beef. Stir the flour through the ground
beef. Add beef broth and diced tomatoes; stir bringing to a
light boil. Add the mini rotini and stir through until all is
well combined. Simmer on medium-high, stirring often for 7-8
minutes. Sprinkle with cheese; cover and remove from heat.
Serve when cheese is melted.

SKILLET CHICKEN POT PIE
1 lb. boneless chicken breasts, cut into small cubes
1 Tablespoon canola oil
2-3 fresh carrots, peeled and diced
1 small onion, diced
2-3 cloves garlic, diced
1 teaspoon dried thyme leaf
1 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon pepper
1 (14.5 oz.) can chicken broth
1-1/2 cups petite peas, thawed
1 cup milk
2 teaspoons chicken flavored soup base
2-1/2 Tablespoons flour
3/4 cup shredded parmesan cheese
Using a large skillet with a lid, sauté chicken, carrots,
onions, and garlic in oil until chicken is lightly browned. Sprinkle
with thyme, oregano, salt, and pepper while cooking. Pour chicken
broth into skillet and bring to a light boil. Stir in peas and soup
base. Reduce heat; cover and simmer for 12 minutes. Wisk together
the milk and flour. Stir milk mixture into skillet. Stir in
cheese and simmer uncovered for 5 minutes.
Delicious served over rice or fresh baked biscuits.

SIMPLE & DELICIOUS GROUND BEEF
STROGANOFF
1-1/4 lb. lean ground beef
1 small onion, diced
2-3 cloves garlic, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
2 Tablespoons Worcestershire sauce
1 small can sliced mushrooms
2 Tablespoons flour
2 cans Campbell's Beef Consommé
1/2 teaspoon dry mustard
1 (8 oz.) container sour cream
In a large skillet, sauté ground beef with onions and
garlic. Sprinkle with salt, pepper and Worcstershire while
browning. Add mushrooms to browned ground beef and cook an
additional minute. Sprinkle ground beef mixture with flour and
stir until mixed through the ground beef. Pour both cans of beef consommé
and the dry mustard into the skillet with the ground beef. Stir
through and simmer on medium-high for 8-10 minutes. Remove from
heat and stir in sour cream.
Simple and delicious served over noodles.
