- 2-1/2 lbs. boneless, skinless chicken thighs
- 1 cup teriyaki sauce
- 1 (12 oz.) bag shredded broccoli slaw
- 1/4 cup chicken broth
- 4-8 small flour tortillas
-
Lightly salt and pepper both sides of the chicken thighs and lay them in the crockpot.
-
Spread sauce over top and then pour in the broth around the sides.
-
Cook on high for 3 hours or low for 6 hours.
-
Remove lid and shred chicken with a spoon or two forks. Stir in the broccoli slaw and cook for about 5 additional minutes.
Cooking time varies from crockpot to crockpot. If your crockpot tends to run, high or hot, cooking for 2.5 or 3 hours is typically for high setting. Cooking low could be 4 hours if pot runs high/hot.
Chicken should shred easily with a fork. Always make sure chicken is cooked through.
One of the things we love about this meal is the broccoli slaw is covered in sauce yet still has a nice crunch to it. Leftovers the next day heat up nicely for lunch or another dinner.
We always look for bags of broccoli slaw to go and sale, try to find organic if possible.
