Easy Shrimp Fajita Bowls Recipe with Cilantro-Lime Rice
We love Fajita bowls and they are our favorite way to eat Mexican without too much fat or carbs. If you want to lessen the carbs even further, simply use frozen cauliflower rice instead of regular rice.
You can make these fajita bowls even quicker by using prepackaged fajita seasoning and prepackaged guacamole.
One of our favorite quick secrets to preparing dinner bowls is using MINUTE RICE. Just one cup of boiling water or broth, add one cup of rice, remove from heat and cover for 5-7 minutes you have perfect rice.

- 3 cups long-grain brown rice, cooked
- 2 large limes, juice and zest
- 1 teaspoon ground cumin
- 1/4 cup fresh cilantro leaves, chopped
- salt and black pepper, to taste
- 1 lb. fresh shrimp, peeled and deveined
- 2 tablespoons extra virgin olive oil + more, if needed
- 2 medium ed bell peppers, thinly sliced
- 1 medium yellow pepper, thinly sliced
- 1 medium onion, thinly sliced
- 1/4 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon garlic powder
- 1/2 teaspoon onion powder
- Additional cilantro and lime wedges for serving
- additional salt and black pepper to taste

Add the cooked rice, lime juice, lime zest, ground cumin, and cilantro to a large bowl. Season with salt and black pepper, to taste, and stir to combine. Cover to keep warm and set aside.

Add two tablespoons olive oil to a large skillet set over medium heat. Add the bell peppers and red onion. Season with salt and black pepper, to taste, and stir to combine. Cook, stirring occasionally, until the vegetables soften and develop a bit of color, approximately 10 minutes.

Transfer the veggies to a plate and add the shrimp to the skillet. (Add a little more olive oil, if necessary). Mix salt and spices togeter and sprinkle over shrimp. Season with additional salt and black pepper, to taste, and cook just until the shrimp turns opaque, approximately 3-4 minutes. Do not overcook.

To serve, divide the seasoned rice between four serving bowls and top each bowl with the cooked vegetables and shrimp. Garnish with additional cilantro and lime wedges, if desired. Enjoy!
How To Assembly and Prepare Your Shrimp Fajita Bowls
Gather 4 of your favorite bowls and spoon rice onto the bottom of each bowl. Followed by the shrimp and vegetables. Squeeze additional lime and serve with guacamole.
How to Cook White Rice –
We cook lots and lots of white rice so we have perfected the recipe for you. Using a medium sauce pan with a tight fitting lid, add 1-3/4 cups of water or chicken broth. Add a little salt for flavor and bring to a light boil. Stir in rice; cover pan and reduce heat to low. Let cook on low for 16 minutes. Remove from heat and let sit for 5 minutes. Fluff with a fork and serve.

Shrimp. We always use fresh shrimp for this recipe never frozen. Large shrimp works well, but smaller shrimp are ok too.
Fajita Seasoning. Chili powder, cumin, garlic powder, onion powder, salt and pepper. If you don’t want to make your own fajita seasoning, buy a prepackaged mix and use about 1/2 tablespoon.
Guacamole. You can easily make your own guacomole with lime or you can purchase delicious packaged guacamole at the grocery store to save some time. But – fresh guacamole is simple to prepare so give it a try!
