Easy Beef, Bean and Rice Casserole – Perfect for a Week night Meal – Mexican Taco Casserole
This Kraft inspired Mexican casserole with ground beef, black beans and corn is sure to be a big hit with everyone at the dinner table.
This recipe is easy to prepare and super-delicious, one the whole family will enjoy. Just brown some ground beef, add a few ingredients, and pop in the oven!

- 1-1/4 lb. ground beef
- 1-1/2 cups Mexican Shredded Four Cheese
- 1 pkg. Taco Seasoning Mix
- 1 cup white rice, uncooked
- 1 cup black beans
- 1 (11) oz. can Mexicorn, drained
- 1 (14.5) oz. can diced tomatoes, undrained
- 1 cup Salsa
- 1-1/2 cups chicken broth

Preheat oven to 375ºF and spray a 13 x 9 casserole dish with nonstick spray.

Brown ground beef and onions in a large skillet; carefully drain of any grease.

Add remaining ingredients except for 1/2 cup of the cheese; stir to combine. Bring to a light simmer.

Spoon mixture into baking dish. Cover and bake 35 to 40 minutes or until rice is tender.

Top with reserved cheese and bake for an additional 5 minutes.
Healthy ingredients like beans, corn and rice make up this beautiful casserole dish. Just brown the ground beef in a skillet and stir in everything else. Pour into a casserole dish and pop into the oven! A simple and delicious dinner will come out of the oven.
To give this casserole dish even more of a Mexican taste, we use a can of Mexicorn, but you can use any corn you like and it will be fine.
