Ingredients

  • 1-1/4 lb. ground beef
  • 1-1/2 cups Mexican Shredded Four Cheese
  • 1 pkg. Taco Seasoning Mix
  • 1 cup white rice, uncooked
  • 1 cup black beans
  • 1 (11) oz. can Mexicorn, drained
  • 1 (14.5) oz. can diced tomatoes, undrained
  • 1 cup Salsa
  • 1-1/2 cups chicken broth

Instructions

  1. Preheat oven to 375ºF and spray a 13 x 9 casserole dish with nonstick spray.

  2. Brown ground beef and onions in a large skillet; carefully drain of any grease. 

  3. Add remaining ingredients except for 1/2 cup of the cheese; stir to combine. Bring to a light simmer.

  4. Spoon mixture into baking dish. Cover and bake 35 to 40 minutes or until rice is tender. 

  5. Top with reserved cheese and bake for an additional 5 minutes.
