Breakfast Eggs with Sauteed Bok Choy

Start your day off clean and healthy with this easy breakfast of eggs and bok choy. Lightly fry your eggs over easy and saute the bok choy with a little oil and butter.

Follow along the instructions for making our delicious “Dip Eggs” to top your sauteed bok choy.

Bok Choy is an often overlooked healthy green. It is overlooked because most people don’t know what to do with it.

Cleaning and cutting the Bok Choy to use with eggs

Definitely use the white parts of the bok choy mixed in with the green leaves. Chop about 2 cups of the bok choy to use in your saute.

Start your day off with a super-healthy breakfast that includes eggs and sauteed bok choy

Ingredients
  • 2 medium eggs
  • salt & pepper
  • 2 cups chopped Bok Choy
  • 1/2 tablespoon olive oil
  • 1 tablespoon butter, divided
Instructions
  1. Clean and chop the bok choy and measure about 2 cups. 

  2. Saute the bok choy in a medium skillet with the olive oil. Lightly salt and pepper as it cooks.

  3. Cook the bok choy for about 5 minutes or until it starts to get soft. Add the butter and cook until it melts.

  4. Spoon bok choy onto your plate and start the eggs.

  5. Turn the skillet to medium high and melt the other 1/2 tablespoon of butter.

  6. Once the butter is melted and the skillet is hot, crack each egg and add them to the skillet. Lower the heat and cook until hot and cooked through. Lightly salt and pepper eggs as they cook.

  7. Slide the eggs on top of the bok choy and add additional salt and pepper if necessary.
