Caesar Salad with Poached Egg –
A nice crisp Caesar Salad goes well with soups or as a nutritious side dish – or even the main meal when you add some protein on top.
If you don’t have shrimp or chicken to add to your Caesar salad, toss on a few poached eggs. Poached eggs are delicious on salads and provide the protein needed to make a complete meal.

We found new croutons that look promising from Marzetti. Marzetti “Simply Dressed” baked croutons with super grains – made with whole wheat, quinoa, spelt and amaranth.
These croutons were perfect for this healthy salad and add a nice crunchy addition. A good Caesar salad always has crunchy croutons added so you really don’t miss the bread.
How to Make A Caesar Salad with Poached Egg:
- 1 bunch of organic Romaine lettuce
- 4 poached eggs
- salt & fresh black pepper
- 2 tablespoons grated Parmesan cheese
- 3 tablespoons Simply Dressed Croutons
Wash the lettuce and dry with a paper towel. Lay lettuce on a cutting board and cut into small pieces using a sharp knife.
Put lettuce in a bowl or large flat plate. Top with the eggs, cheese and croutons. Sprinkle with salt & fresh pepper.
Make Your Own Fresh Caesar Salad Dressing –
DELICIOUS GREEK YOGURT CAESAR DRESSING
4 cloves of garlic, minced fine
3 Tbsp. plain Greek yogurt
1 Tbsp. of Dijon mustard
2 tsp. red wine vinegar
4 anchovies, minced
1/4 tsp. salt
1/4 tsp. pepper
1/2 fresh lemon, juiced
1/2 cup olive oil
Add everything except the oils to a food processor and blend until pureed. With the food processor still on, slowly add the oils until the dressing is creamy and well blended.
