Start your day off with a super-healthy breakfast that includes eggs and sauteed bok choy
Clean and chop the bok choy and measure about 2 cups.
Saute the bok choy in a medium skillet with the olive oil. Lightly salt and pepper as it cooks.
Cook the bok choy for about 5 minutes or until it starts to get soft. Add the butter and cook until it melts.
Spoon bok choy onto your plate and start the eggs.
Turn the skillet to medium high and melt the other 1/2 tablespoon of butter.
Once the butter is melted and the skillet is hot, crack each egg and add them to the skillet. Lower the heat and cook until hot and cooked through. Lightly salt and pepper eggs as they cook.
Slide the eggs on top of the bok choy and add additional salt and pepper if necessary.
