- 1 medium red onion. finely chopped
- 1/4 cup dry white wine
- 1 (15 oz.) can crushed tomatoes
- 1/2 cup Kalamata olives, chopped
- 1 teaspoon dried dill
- 1 teaspoon dried Greek oregano
- 1/2 teaspoon crushed red chili flakes
- Salt and black pepper (to taste)
- 1 lb. large prawns, 16/20 ct., shelled and deveined
- 3 tablespoons fresh parsley leaves, chopped and divided
