Club Steak – What is a Club Steak?

Simply put, the Club Steak is a Strip Steak or New York Strip Steak with the bone left in.

Don’t be Confused –

A Club Steak is very similar to a T-bone steak or Porterhouse steak but does not contain any of the tenderloin.  A porterhouse steak contains much of the tenderloin.  Both are similar in taste and do well with grilling.

Beef Club Steak is also called a Bone-In Strip Steak or New York Strip Steak. It is the short loin (middle of the back) cut of steak. It is the thick side of a T-bone and one of the most popular cuts in the world. The best ones are fairly firm with lots of delicious marbling.

We are all pretty familiar with two of the best cuts of meat – the T-Bone and the Porterhouse Steak. The Club Steak is just the thick side of the T-bone steak and is considered one of the most popular cuts in the world.

Club House Steaks with Creamy Wine Mushroom Sauce

Ingredients:

  • (2) Strip Steaks with Bone or T-Bone steaks
  • Montreal Steak Seasoning
  • salt and pepper to taste
  • 2 Tbsp. butter
  • 8 oz. sliced mushrooms
  • 1 cup Chardonnay
  • 1/3 cup heavy cream
  • 2 teaspoons dried parsley

Directions:

In a medium skillet, melt butter. When foamy, add sliced mushrooms. Simmer over medium heat until almost all water is gone. Add wine, and simmer on medium/low until reduced to about a cup. Add cream, and reduce heat to low. Stir to combine. Keep on low heat, stirring occasionally.

In the meantime, set oven to broil or prepare grill.

Grill/broil steaks for 4-5 minutes per side for medium/rare. (This also depends on how close your steaks are to the heat source. Ours, in the broiler, were only about 1 1/2 inches away). Add to cooking time for steaks cooked more well-done. Remove from broiler/grill, let sit a minute, and top with sauce. Serve steaks immediately.

This is the perfect recipe that lets someone know they are special. The best part is – this recipe is so quick which leaves lots of time for celebrating instead of cooking!

Club House Steak with Creamy Blue Cheese Sauce

Ingredients:

  • 4 Strip Steaks with Bone or T-Bone steaks
  • Salt & Pepper
  • 2 tablespoons butter
  • 3 teaspoons Worcestershire

Sauce Ingredients:

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 – 2 teaspoons minced garlic
  • 1 cup milk
  • 4 oz. blue cheese (crumbled)
  • 1 1/2 tablespoons mayonnaise
  • 1/4 teaspoon ground mustar1/2 teaspoon onion powder

Directions:

Rinse steaks in cold water and pat dry. Lightly sprinkle with salt & pepper.

Microwave butter and Worcestershire until melted. Stir to combine. Place steaks in broiler pan and broil for 4-5 minutes per side. Thicker steaks for about 7-8 minutes per side. Remove when done and brush with butter mixture.

Make the Blue cheese sauce by making basic white sauce. Read more on a basic white sauce recipe.

Melt 2 tablespoons of butter in small sauce pan. Add garlic, salt & pepper. Stir continuously for about 1 minute. Keeping the heat medium-high, slowly add the milk and stir until combined. Add blue cheese, mayonnaise, ground mustard and onion powder, stirring to combine.

Serve immediately over your cooked steaks.

How to Prep a Beef Club Steak

Club steaks are considered to be a very tender cut of meat, so they are perfect for broiling or grilling. How to prep your perfect steak? Lay steaks on a piece of waxed paper, sprinkle with a little salt and pepper and let sit for about 20 minutes.

Where to Purchase Club Steak?

Most of us have never seen a club steak advertised in our grocery store meat section. So where do you get this perfect piece of beef? Ask the butcher if he could prepare a club house steak for you.

What to Serve with Beef Club Steak?

Since club steak is such a delicious and fancy dinner, we would serve on the side a baked potato with butter and sour cream & chives.  A green vegetable of roasted asparagus.

Also, another great choice would be oven roasted redskin potatoes.

With a creamy sauce, serve a white rice and yummy creamed spinach.
