This Week….
DAY 3’s Herb-Fried Chicken was another big hit for this week’s menu as well as the Orzo pasta with lemon and spinach! Both are simple to prepare and loaded with flavor. Enjoy!
DAY 5’s Pesto Pizza brings you one of our favorite ways of eating pizza. While it seems everyone in America loves traditional pizza, this is one of our personal favorite pizza recipes. It’s even more satisfying in the summer when you can grow your own basil to use in the sauce, but we love it year round!
This Week We Have Sweet Potato Wedges!
Do you serve enough sweet potatoes after the holidays?
Here is how to make the quick sweet potato wedges –
Ingredients:
- 2 large sweet potatoes
- 2 tablespoons olive oil
- 1/2 teaspoons salt
- 2 teaspoons sugar mixed with 1/2 teaspoon cinnamon
Instructions:
1. Preheat oven to 425 degrees.
2. Spray a cookie sheet with nonstick spray.
3. Using a sharp knife, slice off just the end tips of each potato.
4. Slice the sweet potatoes in half lengthwise, then cut each half again into wedges.
5. Place potato wedges in a large bowl and coat with olive oil. Sprinkle lightly with salt.
6. Place sweet potatoes on the cookie sheet, skin side down, sprinkle with sugar and cinnamon mixture.
7. Bake for about 20-25 minutes. Serve with honey butter.
This week’s dessert, Millionaire Pie, is another one of those desserts that is very easy to prepare, but tastes like it was loads of work. For a variation, try it with a graham cracker crust. Enjoy!
