Turkey Zucchini Meatballs

We love these healthy turkey zucchini meatballs that are so easy to prepare for a healthy meal.

Ingredients

  • 1 lb. ground turkey - 85% Lean
  • 2 cups shredded zucchini ( about 1 medium zucchini)
  • 1/2 cup shredded Parmesan cheese
  • 3/4 cup oatmeal (regular oatmeal works best)
  • 1 mediume egg
  • 1 teaspoon lemon pepper seasoning
  • 1/2 teaspoon salt
  • 1/2 cup BBQ sauce

Instructions

  1. Preheat oven to 425 F.  Spray a cookie sheet with nonstick spray or line with foil and lightly spay foil.

  2. Gently mix everything together in a medium bowl with the exception of the BBQ sauce. Let mixture sit in the refrigerator for about 4-5 minutes.

  3. using a 1/4 inch cup, fill the cup with turkey mixture and then roll into a ball shape using your hands. Lay the meatballs on the cookie sheet in a row - careful not to touch.

  4. Bake for 20 minutes and then remove from the oven. Brush each turkey meatball with a light coating of BBQ sauce. Place back in the oven and bake or broil for about 2 additional minutes.
