Ingredients

  • 1 baguette
  • 4-6 slices of medium-rare roast beef
  • 2 oz arugula
  • 2 tbsp mayonnaise
  • 1 tbsp white truffle oil
  • 1 oz shaved parmesan
  • 1 oz pine nuts
  • Salt and pepper to taste

Instructions

  1. Mix the mayonnaise and truffle oil until well combined.
  2. Roast the pine nuts in a pan on medium-high heat for about 3-4 minutes, or until golden brown on the outside.
  3. Cut the baguette open and spread out the truffle mayonnaise.
  4. Add the arugula over the baguette.
  5. Warm the beef slices in the microwave for about 20 seconds and add the slices of warm roast beef to the bottom of the baguette.
  6. Add the shaved parmesan.
  7. Season with salt and pepper.
  8. Top off with roasted pine nuts. Cut in half – enjoy
