Ingredients

  • 1 Mango peeled and sliced
  • 1 cup fresh blueberries washed and dried
  • 1 bunch of Romaine lettuce washed, dried and chopped
  • 1/2 of a medium cucumber - seeds removed and sliced
  • 1/2 cup crumbled feta cheese

Instructions

  1. wash Romaine lettuce and cut into thin strips.

  2. Toss lettuce in a salad spinner to dry.

  3. Arrange cut lettuce in two bowls and lightly salt and pepper.

  4. Top lettuce with slices of mango, blueberries and cucumber.

  5. Sprinkle with feta cheese. Pour a little balsamic white vinegar and oil on top of both salads.
