Healthy and Delicious Tossed Salad with Fresh Mango – Blueberries and Cucumber
Mango Salad! A summer tossed salad with mango, blueberries and cucumber is perfect with a grilled side of meat. What makes this summer salad even better is the white balsamic vinegar drizzled on top.
If you haven’t tried white balsamic vinegar, you are in for a real treat – it complements the fruits perfectly without overpowering. It is one of our favorite vinegars for salads and raw fruits and vegetables.
The Basic Ingredients for this Summer Tossed Salad –
1 Mango, peeled and sliced
1 cup fresh blueberries, washed and dried
1 bunch of Romaine lettuce, washed, dried and chopped
1/2 of a medium cucumber – seeds removed and sliced
1/2 cup crumbled feta cheese
Wash & dry the Romaine lettuce and then cut into strips using a sharp knife.
Eat this healthy and delicious salad anytime, but summer is when the flavors will really pop!
- 1 Mango peeled and sliced
- 1 cup fresh blueberries washed and dried
- 1 bunch of Romaine lettuce washed, dried and chopped
- 1/2 of a medium cucumber - seeds removed and sliced
- 1/2 cup crumbled feta cheese
wash Romaine lettuce and cut into thin strips.
Toss lettuce in a salad spinner to dry.
Arrange cut lettuce in two bowls and lightly salt and pepper.
Top lettuce with slices of mango, blueberries and cucumber.
Sprinkle with feta cheese. Pour a little balsamic white vinegar and oil on top of both salads.
