Preheat the oven to 375. Line a cookie sheet with parchment paper.

Wash and peel the potatoes. Cut them into cubes (cut potatoes in half then into fourths, about 1 inch thick)

Place the potatoes in a large mixing bowl. Add in 2 tablespoons avocado oil, and half the salt, black pepper, and garlic powder. With your hands mix until the potatoes are thoroughly coated.

Place the potatoes on the cookie sheet in a single layer.

Cook the potatoes for 20 minutes

In the same mixing bowl add in the the green beans, remaining oil, salt, pepper and garlic powder.

After 20 minutes remove the potatoes from the oven. Flip the potatoes and add the green beans to the cookie sheet.

Roast for another 30 minutes

Remove the cookie sheet from the oven. Garnish with parsley if desired.
