Ingredients

  • 1/2 tablespoon olive oil
  • 1/2 cup chopped celery
  • 1 small onion, minced
  • 1 clove garlic, minced
  • 3 cups chicken broth
  • 3 cups frozen hash brown potatoes, thawed
  • 1-1/2 cup frozen peas and carrots, thawed
  • 1/2 tsp. dill
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 (6 oz.) pouch boneless pink salmon
  • 1 can fat-free evaporated milk
  • 1 can cream-style corn

Instructions

  1. Saute onion and celery for about 5 minutes or until onions are soft. Add the chopped garlic and saute for another minute.
  2. Add the chicken broth, hash brown potatoes, peas, carrots, dill, salt and pepper; bring to a light boil. Reduce heat and simmer for 10-12 minutes.
  3. Stir in the salmon, evaporated milk and corn; simmer until everything is heated through.
