Ingredients

  • 1 lb. boneless chicken breast, cut into small cubes
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3/4 cup diced green pepper (about 1 small green pepper)
  • 3 cloves garlic, minced
  • 1/2 cup onion, diced find
  • 1 (15 oz) can diced tomatoes
  • 2/3 cup half-and-half
  • 2 teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 cup Monterey Jack cheese, shredded

Instructions

  1. Heat oil and butter in a medium-sized skillet.

  2. Add cubed chicken, green pepper, garlic and onion. Saute for about 5 minutes or until chicken is cooked most of the way through. Lightly salt & pepper chicken while it's cooking.

  3. Stir in tomatoes,cream, chili powder and oregano. Bring to a light boil. Reduce heat and simmer for about 4-5 minutes.

  4. Sprinkle cheese over top and cook for 1 minute or until cheese has melted.
