Ingredients

  • 1/2 tablespoon olive oil
  • 1 small onion, chopped fine
  • 8 oz. baby bella mushrooms, diced
  • 3/4 lb. lean ground beef
  • 2 cups beef broth, divided
  • 1 tablespoon flour
  • 1/2 cup green lentils
  • 1/2 tablespoon Worcestershire
  • 1/2 teaspoon garlic salt
  • 2 teaspoons steak seasoning (like Montreal)
  • 8 slices provolone cheese. divided
  • 6-8 buns (we use slider buns for these)
  • salt & pepper

Instructions

  1. In a small sauce pan with a lid, bring one cup of beef broth to light boil. Stir in lentils; reduce heat and cook for 22-25 minutes or until lentils are very tender. 

  2. While the lentils are cooking, cook the mushrooms and onions in olive oil until the mushrooms are reduced by about half.  Lightly salt and pepper and add a few splashes of Worcestershire sauce while cooking.

  3. Add the ground beef to the skillet and continue cooking until the beef is well browned. Sprinkle beef with steak seasoning, garlic salt and pepper.

  4. Once beef is well cooked, sprinkle with flour and stir until beef is coated.

  5. Add lentils to the skillet with the beef. 

  6. Stir in beef broth and Worcestershire sauce and simmer on low for about 2-3 minutes.

  7. Cut two slices of provolone cheese into small pieces and stir into beef. Stir until cheese has completely melted into the beef.

  8. Spoon mixture on buns and top with an additional slice of provolone cheese.
