Ingredients

  • 1 lb. Thin Spaghetti
  • 3 tablespoons butter
  • 2 tablespoons flour
  • 2 cloves garlic
  • 2 cups half and half
  • 1/2 cup chicken Broth
  • 1/2 cup Parmesan Cheese grated
  • 1/2 cup Pecorino Romano grated
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions, drain and put pasta back into same pan.

  2. Gather all your ingredients to make the "roux" and have ready to go on the counter next to your stove.

  3. Heat butter in a medium sized skillet over medium heat and lightly cook garlic for about 1 minute, careful not to burn.

  4. Add the flour and whisk constantly about 1 minute until well blended with the melted butter.

  5. Very slowly whisk in the half & half and stir until sauce in starting to thicken. Add the chicken broth and cheese to the skillet and stir until well blended and cheese is melted.

  6. Add you cooked and warm pasta to the pan and stir until well coated.
