No Bacon Carbonara

A simple dish of pasta carbonara that is delicious

Ingredients

  • 12 oz. spaghetti
  • 2 tablespoons butter
  • 2 large egg yolks
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan Cheese
  • 1/2 teaspoon salt
  • Freshly ground black pepper

Instructions

  1. Cook 12 oz. pasta according to package directions but use less water than called for. Add 1 teaspoon soup base and salt to the cooking water.

Using a small bowl, mix together:

  1. 2 large egg yolks
  2. 1/2 cup heavy cream
  3. 1/2 cup grated Parmesan Cheese
  4. Freshly ground black pepper
  5. Drain the pasta and reserve about 1/4 cup of that delicious cooking liquid -
  6. Quickly add hot pasta right back to the pan and put on a warm burner. Add the butter to the pasta and gently stir until the butter is melted. Add the reserved cooking water to the pasta and stir again.

  7. Stir the egg, cream and cheese mixture into the hot pasta. Sprinkle with black pepper.
  8. Serve with extra Parmesan Cheese!
