Ingredients

  • 1 tablespoon oil
  • 1 tablespoon butter
  • 1 small green pepper, cleaned, seeds removed and diced
  • 2 cloves garlic, minced
  • 1 small onion, chopped fine
  • 2 cups chicken broth
  • 2 cups Instant Rice
  • 1/2 teaspoon dried cumin
  • 1 teaspoon chili powder
  • 1 (8 oz,) can tomato sauce
  • 1 (10 oz.) can Rotel Diced tomatoes with green chilies

Instructions

  1. Using a medium skillet with a lid, saute green pepper, onion and garlic until soft.

  2. Add the rest of the ingredients except for the rice; stir and bring to a light boil.

  3. Stir in the rice; reduce heat and cover.

  4. Let cook for about 5-6 minutes.
