Delicious Mexican Rice with Minute Rice – Quick and Easy Side Dish for Dinner

- 1 tablespoon oil
- 1 tablespoon butter
- 1 small green pepper, cleaned, seeds removed and diced
- 2 cloves garlic, minced
- 1 small onion, chopped fine
- 2 cups chicken broth
- 2 cups Instant Rice
- 1/2 teaspoon dried cumin
- 1 teaspoon chili powder
- 1 (8 oz,) can tomato sauce
- 1 (10 oz.) can Rotel Diced tomatoes with green chilies

Using a medium skillet with a lid, saute green pepper, onion and garlic until soft.

Add the rest of the ingredients except for the rice; stir and bring to a light boil.

Stir in the rice; reduce heat and cover.

Let cook for about 5-6 minutes.
Minute Rice is simmered in a seasoned tomato sauce with little bits of diced tomatoes and green peppers. Delicious side dish that the whole family will love.
Sauté the green pepper, onion and garlic in the olive oil and butter until soft. Green pepper is a great addition to rice because it’s very high in Vitamin C.
