Delicious Minute Rice Mexican Rice – Quick and Easy Side Dish for Dinner
Minute rice is one of those food items you want to keep in your pantry for days when you run out of side dish ideas. This super-easy Mexican rice goes well with beef, pork or chicken dishes and also compliments all of your favorite Mexican dishes.
Minute rice Mexican Rice takes about 10 minutes to prepare and the end result is a delicious rice side dish – or toss in some sliced sausage and make it a complete meal.

- 1 tablespoon oil
- 1 tablespoon butter
- 1 small green pepper, cleaned, seeds removed and diced
- 2 cloves garlic, minced
- 1 small onion, chopped fine
- 2 cups chicken broth
- 2 cups Instant Rice
- 1/2 teaspoon dried cumin
- 1 teaspoon chili powder
- 1 (8 oz,) can tomato sauce
- 1 (10 oz.) can Rotel Diced tomatoes with green chilies
Using a medium skillet with a lid, saute green pepper, onion and garlic until soft.
Add the rest of the ingredients except for the rice; stir and bring to a light boil.
Stir in the rice; reduce heat and cover.
Let cook for about 5-6 minutes.
Minute Rice is simmered in a seasoned tomato sauce with little bits of diced tomatoes and green peppers. Delicious side dish that the whole family will love.
