Ingredients

  • 8 eggs hard boiled and peeled
  • 3-4 tablespoons real mayonnaise
  • 2-3 teaspoons yellow mustard
  • salt & pepper

Instructions

  1. Using a very sharp knife, slice each egg in half lengthwise. Do not use a perforated knife as this can tear the eggs.

  2. Very carefully scoop out the hardened yolk and place them in a bowl. Smash with the back of a fork and then lightly salt and pepper.

  3. Mix in mayonnaise and mustard. Stir with the fork until creamy. Taste and add additional mayonnaise or mustard if necessary.  Add additional amount of salt and pepper if needed.

  4. Using a teaspoon, scoop the mixed yolk into each half of the egg. Finish eggs with a sprinkle of paprika.
