Knorrs Rice and Chicken Skillet Dinner

This is a quick and delicious dinner that uses Knorrs Side Dish Rice packets to get dinner on the table in no time.

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 small onion, chopped fine
  • 1-1/2 lbs. boneless, skinless chicken thighs
  • 2 packages Knorr Rice Medely
  • 4-1/4 cups water
  • 1 cup frozen peas, thawed
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. Melt butter with the olive oil in a large skillet with a lid.

  2. Over medium-high heat, cook chicken thighs on both sides until well-browned.

  3. After both sides are well browned, cover; reduce heat and let cook for about 5-6 minutes.

  4. Remove chicken to a plate and add the onions to the skillet.  Cook onions for about 3-4 minutes.

  5. Add packages of Knorrs Rice and peas to the skillet along with 4-1/4 cups of water. Stir and bring to a light boil. Sprinkle rice with Parmesan cheese.

  6. Reduce heat and add the chicken back to the skillet.

  7. Cover and cook for 10 minutes.
