
Make a Family Favorite Side Dish - Instant Pot Lemon Rice
Wash the lemon and cut in half.
Add everything to the Instant Pot and stir to combine.
Cut one thin slice from the lemon and then squeeze the juice from the remaining lemon into the Instant Pot and stir again. Cut the lemon slice in half and lay on top of the rice mixture.
Seal the lid and turn the knob to the "SEALING" position.
Push the "RICE" button to start the cooking process.
Once the rice has finished cooking, let sit for 8 minutes.
Do a "QUICK RELEASE" and carefully remove pot. Give it a quick stir.
If you choose to make it a creamy lemon version, stir in the milk and Parmesan cheese.
For a delicious creamy rice - you can add milk and Parmesan cheese after the rice has been cooked.
