3-4Tbsp.butter
1mediumonion, diced fine
2-1/4lbs.Russet potatoes, peeled and cut into 1" cubes
2-1/2cupschicken broth
3cupsmilk
1Tbsp.dried parsley
1/2tsp.salt
1/4tsp.pepper
Instructions
Using a heavy soup pot or pan, cook onions in butter for about 2-3 minutes or until onions are tender. Add potatoes to the pan and lightly salt & pepper. Cook potatoes with the onions for about 3-4 minutes, stirring often.
Add the chicken broth, milk, parsley, salt and pepper to the pan with the potatoes. Bring to a light boil; reduce heat and cook for 20 minutes.
Carefully mash about 1/2 of the potatoes with a fork or a potato masher. Cook for an additional 5-10 minutes.
