Ingredients

  • 1 (12 oz.) box of Barilla rotini (look for Pronto Pasta)
  • 1 lb. lean ground beef
  • 1 small onion diced fine
  • 1/2 tablespoon taco seasoning
  • 2 cups water
  • 1 (15 oz.) can black beans, rinsed
  • 1 (15 oz.) can petite diced tomatoes
  • 2 (10 oz.) cans enchilada sauce
  • 1 small can green chilies
  • 2 cups shredded mozzarella cheese
  • salt & pepper to taste

Instructions

  1. Using a deep skillet with a lid, brown the ground beef and onions until there is no pink left in the ground beef.
  2. Sprinkle beef with taco seasoning and salt & pepper while browning.
  3. Still in the rotini pasta and add the 2 cups of water.
  4. Stir and bring to a light boil.
  5. Add the rest of the ingredients, stir and bring to a light boil again.
  6. Reduce heat slightly, cover with a tight lid and cook for about 7-8 minutes or until pasta is tender.
  7. Sprinkle with cheese and cover until cheese is melted.
