Easy One Skillet Enchilada Pasta
We are often asked “what would be the best meal to prepare, using just one skillet or pot, that the whole family will love?”
Now that’s a pretty tall order .. but,
well, here it is! This is a tasty yet simple to prepare, One Skillet Enchilada Pasta recipe perfect for the busy family.
Barilla has a new pasta out that is called – Pronto Pasta. It’s a One Pan, No Boil, No Drain pasta that works perfectly in one pot pasta dishes. But to be honest, we do believe it’s just their standard rotini pasta with a new name.
It really doesn’t get much easier than this and the good part is .. it’s Dinner Delicious!

Dinner is Simple with this ONE skillet dinner - delicious pasta in enchilada sauce,
- 1 lb. lean group beef
- 1 small onion diced fine
- 1/2 tablespoon taco seasoning
- salt & pepper to taste
- 1 (12 oz.) box of Barilla rotini (look for Pronto Pasta)
- 2 cups water
- 1 (15 oz.) can black beans, rinsed
- 1 (15 oz.) can petite diced tomatoes
- 2 (10 oz.) cans enchilada sauce
- 1 small can green chilies
- 2 cups shredded mozzerella cheese

Using a deep skillet with a lid, brown the ground beef and onions until there is no pink left in the ground beef.

Sprinkle beef with taco seasoning and salt & pepper while browning.

Still in the rotini pasta and add the 2 cups of water.

Stir and bring to a light boil.

Add the rest of the ingredients, stir and bring to a light boil again.

Reduce heat slightly, cover with a tight lid and cook for about 7-8 minutes or until pasta is tender.

Sprinkle with cheese and cover until cheese is melted.
