Ingredients

  • 1 lb. lean ground beef
  • 3 tablespoons grated parmesan cheese
  • 5 tablespoons almond flour
  • 1 large egg
  • 1 small yellow onion chopped fine
  • 3 cloves garlic, chopped fine
  • 3 tablespoons chopped parsley
  • 2 cups marinara sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon coriander

Instructions

  1. Preheat the oven to 350F.
  2. Place all ingredients, except marinara sauce, in a deep bowl. Leave some of the parsley for serving.
  3. Using your hands, mix everything gently, being careful to not overmix.
  4. Cover your baking sheet with parchment paper or grease it with about 1/2 tablespoon of oil.
  5. With wet hands, form meatballs about 1-1 1/2 inches in diameter.
  6. Place the tray in the oven and bake for approximately 25 -30 minutes.
  7. Pour the marinara sauce into the pan, add the meatballs to the pan, and heat everything together for about 15 minutes.
