Using a sharp knife, cut chicken into thick strips.
Lightly salt & pepper.
Place chicken in the Instant Pot and drizzle with sunflower seed oil and the juice from 1 lime. Stir to combine and coat the chicken.
Sprinkle chicken with 1/2 packet of fajita seasoning, stir again to combine.
Close and secure the lid on the instant pot.
Turn the valve to the "SEALING" position.
Push the "PRESSURE COOK" Button and set the time for 12 minutes.
Once the Instant Pot beeps that it is finished, leave the chicken in the pot for 2 additional minutes.
