Instant Pot Chicken Fajitas with Fresh Lime and Seasonings
If you love the ease of chicken fajitas on a busy night, then you are really going to love these Instant Pot chicken fajitas.
Leftovers are perfect for lunch or tomorrow’s dinner as well!
Cut the raw chicken into strips, squeeze some fresh lime juice, sprinkle with a little fajita seasoning, and toss in your Instant Pot and let it do all the work.
The chicken comes out so tender and moist and super-delicious. Top with your favorite cheese and all of your favorite fajitas toppings!

- 2 lbs. boneless chicken breasts
- salt & pepper
- 1/2 tablespoon sunflower seed oil
- 1 fresh lime
- 1 packet fajita seasoning
- Shredded Cheese for Topping
Using a sharp knife, cut chicken into thick strips.
Lightly salt & pepper.
Place chicken in the Instant Pot and drizzle with sunflower seed oil and the juice from 1 lime. Stir to combine and coat the chicken.
Sprinkle chicken with 1/2 packet of fajita seasoning, stir again to combine.
Close and secure the lid on the instant pot.
Turn the valve to the "SEALING" position.
Push the "PRESSURE COOK" Button and set the time for 12 minutes.
Once the Instant Pot beeps that it is finished, leave the chicken in the pot for 2 additional minutes.
Using a sharp knife, carefully cut 2 lbs. boneless chicken breasts into strip.
Drizzle oil and lime juice over chicken. Sprinkle with seasoning and stir through or blend using your hands.
Pressure cook the chicken fajitas for just 12 minutes.
