Ingredients

  • 1 lb. boneless chicken breast
  • 2 cloves garlic, minced
  • 1 (15 oz) can black beans, drained and rinsed
  • 1-1/2 cups yellow corn
  • 1 (16 oz.) jar organic salsa
  • 5 cups chicken broth
  • 1/2 cup dried red lentils
  • 1-2 tablespoon tomato paste
  • 1 tablespoon chili powder
  • 1/2 tablesoon dried cumin
  • 1 fresh lime
  • 1-1/2 cups Mexican cheese

Instructions

  1. Toss everything in your crockpot with the exception of the cheese.  Cook on high for 3-1/2 to 4 hours or low for 6-7 hours.

  2. Add additional broth if needed.

  3. Shred the chicken with two forks right in the crockpot. Squeeze the juice from about 1/2 of a lime into the soup and stir.

  4. Top each bowl of soup with cheese.
