Ingredients

  • 1/2 lb. boneless chicken breasts
  • 1 (32 oz) carton of chicken broth
  • 4 cups water
  • 2 medium carrots, grated (about 1-1/4 cup
  • 2 teaspoons chicken base
  • 3 cloves garlic, minced
  • 1 tablespoon dried parsley
  • 1 teaspoon dried thyme
  • 1/2 cup white rice, uncooked

Instructions

  1. Rinse chicken breasts with water and place in a pan with the chicken broth.

  2. Bring broth to a light boil and cook chicken for about 8 minutes.

  3. Remove chicken to a cutting board and cut into very small pieces when cooled.

  4. Add 3 cups of water, rice, carrots, garlic, soup base, parsley, thyme and salt & pepper to the pan. Stir and bring to a light boil; cook for 14 minutes.

  5. Add the chicken back to the pan; stir and cook for about 4-5 minutes on low. Add the additional one cup of water.
