Easy Chicken and Rice Soup Recipe – Perfect Kids Chicken Soup Recipe
This easy chicken and rice soup is one of our favorite soups because it’s so easy to prepare and perfect for when you’re not feeling well and just need something quick. Once you start making delicious homemade soups, it’s difficult to open a can of soup even when you’re not feeling well.
No worries, this comforting easy chicken and rice soup will be on the table in about 25 minutes and is filled with nourishing ingredients. This is a kid-friendly soup that all kids love and you won’t get any argument about eating a big bowl for dinner.
Kid friendly because there aren’t any big “chunks” of anything, just a perfect blend of chicken and rice.
This Easy Chicken Soup with Rice is Perfect for when Someone is Sick.
- 1/2 lb. boneless chicken breasts
- 1 (32 oz) carton of chicken broth
- 4 cups water
- 2 medium carrots, grated (about 1-1/4 cup
- 2 teaspoons chicken base
- 3 cloves garlic, minced
- 1 tablespoon dried parsley
- 1 teaspoon dried thyme
- 1/2 cup white rice, uncooked

Rinse chicken breasts with water and place in a pan with the chicken broth.

Bring broth to a light boil and cook chicken for about 8 minutes.

Remove chicken to a cutting board and cut into very small pieces when cooled.

Add 3 cups of water, rice, carrots, garlic, soup base, parsley, thyme and salt & pepper to the pan. Stir and bring to a light boil; cook for 14 minutes.

Add the chicken back to the pan; stir and cook for about 4-5 minutes on low. Add the additional one cup of water.
Instead of cutting the carrots into chunks, grate the carrots using the large holes on your grater. This only takes a minute or two and makes the chicken rice soup more traditional and picky eaters won’t notice them as much.
The rice will continue to absorb liquid, so have extra chicken broth or water on hand. We use both chicken broth and water with a little soup base to save money.
Our chicken and rice soup is great to take to someone who is sick or is on the mend from stomach problems. There are no onions in the soup to make it easier to digest.
This is a delicious chicken and rice soup base recipe, but you can add ingredients to make it even more flavorful and healthy!
