Ingredients

  • 1-1/2 lbs. boneless, skinless chicken breasts or thighs
  • 2-1/2 cups chopped carrots (about 4-5 smaller carrots)
  • 1 medium onion, chopped fine
  • 3/4 cup celery, chopped
  • 3/4 cup orzo pasta
  • 1 tablespoon olive oil
  • 3 cloves garlic, chopped fine
  • 1/2 cup chopped parsley
  • 1 32 oz. container chicken broth
  • 1-2 cups water
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons chicken soup base.
  • fresh juice from 1/2 of a large lemon

Instructions

  1. Place the onions on the bottom of the crockpot and drizzle with olive oil.
  2. Lightly salt and pepper the chicken pieces and lay on top of the onions.
  3. Add the rest of the ingredients except the pasta and lemon.
  4. Cook on high for about 5 hours or low for 7 8.
  5. Turn the crockpot to high.
  6. Remove chicken pieces and shred with a fork. Place chicken back in the crockpot.
  7. Add the noodles, lemon and parsley. Cover and cook for about 20 minutes.
