Baked Reuben Dip

Ingredients

  • 8 oz corned beef deli, roughly chopped. Reserve 1 tbsp of the meat to sprinkle on dip before baking (optional)
  • 1 cup sauerkraut drained well and squeezed dry
  • 1 cup mayonnaise
  • 2/3 cup thousand island dressing
  • 4 oz chive and onion cream cheese softened
  • 2 cups swiss cheese shredded
  • 1-2 teaspoons fresh chives chopped
  • Rye crackers for dipping. Alternatives: blue corn chips or rye bread.

Instructions

  1. Preheat the oven to 350 degrees.
  2. Add the dressing, mayonnaise and cream cheese to a medium bowl and blend using a mixer until fully combined.
  3. Be sure to squeeze all of the excess liquid from sauerkraut and then add to the bowl along with the chopped meat and 1 ½ cups cheese. Mix by hand until well blended.
  4. Spray a baking dish with non-stick cooking spray.  Add the Reuben mixture to your dish and spread evenly.
  5. Sprinkle with remaining cheese, chives and reserved corn beef (optional).
  6. Bake for 25 minutes or until bubbly and golden. Leave in oven a minute or two extra under the broiler to brown cheese further if desired.
  7. Serve immediately with rye crackers. Alternatives: blue corn chips or rye bread.
