Ingredients

  • 1-1/2 lbs. boneless chicken breasts cut into 2" cubes
  • 1 medium lime
  • 2 tablespoons taco seasoning
  • 1-1/2 tablespoon olive oil divided
  • salt & pepper
  • Flour Tortillas

Toppings

  • Chopped lettuce or cabbage
  • tomatoes
  • Shredded Mozzarella cheese

Instructions

  1. Place chicken cubes into a bowl and squeeze the juice of 1 lime over all.
  2. Drizzle 1 tablespoon of oil over the chicken and mix through.
  3. Sprinkle chicken with taco seasoning; mix to make sure all the chicken is well coated.
  4. Let sit for about 30 minutes.
  5. If you want to marinate longer, leave in the refrigerator.

  6. Heat the remaining tablespoon of oil in a skillet and saute the chicken for about 5 minutes or until the chicken is cooked through.
  7. Lightly salt & pepper chicken as it cooks.
  8. Lay lettuce and tomatoes on a flour tortilla. Lay cooked chicken pieces on top of the lettuce. Sprinkle with a little cheese and spoon on some tasty lime sauce.
