DAY 2’s Enchiladas will bring your family around the dinner table this week. They sure were a hit at our dinner table!

This Week ….

DAY 1’s Skillet Spaghetti & Meatballs is great for when you don’t have time to cook. This recipe is definitely a keeper!

DAY 6’s Honey-Lime Chicken was an easy meal to prepare. The lime was a welcome change from the usual lemon baste/marinade.  This chicken dish is delicious marinated and baked or grilled! Keep this in mind for milder weather.

This week’s dessert, Mint Chocolate Cream Pie, is super-easy! We thought many of you may not have known that there is a new flavor of pudding mix out there, so we thought we’d use it in this simple and delicious dessert to let you know. Around this time of the year, we’re all looking for simple! The kids devoured this, and wanted more. Enjoy!

Mix up those Vegetables –

If you are trying to include more vegetables in your diet, cook a few different vegetables together for a deliciously different taste.

Chop some red pepper and add it to your sauteed corn or add some sauteed mushrooms to your green peas. This not only gives you a different taste, but lots of added nutrients.

Want to make your vegetable dish a well-rounded side dish? Toss in some boiled and sliced baby potatoes.
