Ingredients

  • 1 (16 oz.) can navy beans, rinsed
  • 1 large tomato, seeds removed and diced
  • 6 cups Romaine lettuce, shredded
  • 1/2 cup Goat cheese, crumbled
  • salt & pepper
  • 1/2 cup balsamic vinaigrette dressing, divided

Instructions

  1. Wash the tomato and the lettuce well.  Carefully cut the lettuce into strips using a sharp knife.

  2. Dice the tomato using the instructions below. Mix the diced tomato with rinsed beans and lightly salt & pepper. Gently stir in 2 tablespoons of balsamic vinaigrette. 

  3. Place equal amounts of lettuce on 4 plates, lightly salt & pepper. Spoon tomato and bean mixture of each plate of lettuce.

  4. Sprinkle eat with goat cheese and a little additional balsamic vinaigrette dressing.
