Ingredients

  • 1 lb. ground turkey (94% fat only)
  • 1 small onion, diced very fine
  • 1 tablespoon olive oil
  • 2 cups grated sweet potato (about 1 medium sweet potato)
  • 1 large egg
  • 1/2 cup dried bread crumbs
  • 1 tablespoon dried parsley
  • 2 teaspoons Dijon mustard
  • 2 teaspoons dried sage leaf
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Meatloaf Topping: 1 tablespoon of honey mixed with 1 tablespoon of Dijon mustard

Instructions

  1. Preheat oven to 350 degrees.
  2. Saute onions in olive oil until tender. Add the 2 cups of grated sweet potato in with the onions and cook for about 3-4 minutes or until potatoes start to get soft.
  3. Lightly salt & pepper while cooking.
  4. Add the ground turkey to a large bowl.
  5. Add the rest of the ingredients to the bowl.
  6. Let the sweet potatoes cool for a few minutes and then blend everything lightly using your hands.
  7. Try not to over mix.
  8. Form into a meatloaf shape and bake for 30 minutes or until cooked through.
  9. Drizzle the honey mustard topping on top of the meatloaf and bake an additional 5 minutes.
