Ingredients

  • 1 egg
  • 1 cup light olive oil
  • 1 teaspoon white vinegar
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon powdered mustard Dijon mustard or yellow mustard *optional

Instructions

  1. Make sure everything sits at room temperature for at least 30 minutes
  2. Blend together the egg, 1 teaspoon lemon juice, 1 teaspoon vinegar, 2 tablespoons olive oil and salt for about 1 minute.
  3. Keep blending and slowly add in the additional oil a few tablespoons at a time.
  4. As the mixture starts to thicken you can drizzle more oil.
  5. Once you have used all the oil and it's thick, stir in 1/2 tablespoon lemon juice and taste.
  6. Add the other 1/2 tablespoon of lemon juice if needed or additional salt.
  7. Stir in a little mustard for flavor if desired.
  8. If mayo becomes to thick stir in a little bit of milk.
