Ingredients

  • 2 slices white bread
  • 1 tablespoon of butter divided
  • 2 teaspoons white sugar
  • 1/4 teaspoon ground cinnamon
  • 3 large eggs
  • 1/2 tablespoon milk
  • salt & pepper

Instructions

  1. Crack the eggs into a bowl and using a fork, whip the eggs with milk, salt and pepper.  Melt 1/2 tablespoon of butter in a medium skillet and cook eggs until light and fluffy. (Watch how to make scrambled eggs here.)
  2. Mix sugar and cinnamon until well blended.
  3. Spread the remaining butter over lightly toasted bread. (Toast bread lightly in your toaster.) Sprinkle toast with cinnamon/sugar mixture. Top cinnamon toast with scrambled eggs.  Sprinkle eggs with additional cinnamon/sugar.
  4. That is how we make our favorite cinnamon toast.  Always mix the sugar with cinnamon first. Lightly toast the bread and use lots of butter. Always let the butter melt into the toast before sprinkling with cinnamon/sugar.
