Ingredients

  • 28 oz. Polish Sausage, sliced
  • 1 tablespoon Olive Oil
  • 2 tablespoons Butter
  • 2 teaspoons Minced Garlic
  • 1 cup Cherry tomatoes, halved
  • 3 Tbsp. Chopped fresh basil
  • 4 cups Fresh Spinach, chopped
  • 1 cup Heavy whipping cream
  • 1/2 cup Chicken broth
  • 1/2 cup Parmesan cheese grated
  • 1 teaspoon Italian seasoning

Instructions

  1. Add the olive oil to a skillet over medium high heat.
  2. Sauté the sausage in the heated oil until browned. Remove and set aside.
  3. Drain the excess grease from the skillet and reduce the heat to medium.
  4. Melt the butter in the skillet.
  5. Stir in the tomatoes and spinach, and sauté until the spinach is wilted.
  6. Add the garlic, and sauté for 30 seconds.
  7. Pour in the chicken broth and heavy whipping cream, stir to combine.
  8. Simmer until the sauce begins to thicken.
  9. Stir in the Italian seasoning and parmesan cheese. Add salt and pepper to taste if desired.
  10. Return the sausage to the skillet, and toss to combine well.
  11. Serve garnished with fresh basil before serving.
