Ingredients

  • 3/4 lb. Spaghetti Your Favorite
  • 2 tablespoons Extra-Virgin olive oil
  • 1 pint Cherry tomatoes, cut in half
  • 3/4 cup Kalamata Olives, pitted and sliced
  • 4 oz. fresh Mozzarella, cut into small cubes
  • 2-3 tablespoons freshly grated Parmesan cheese

Marinade

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon sugar
  • 1/4 teaspoon garlic powder
  • 1 teaspoon Italian Seasoning
  • salt & pepper

Instructions

  1. Cook pasta according to package directions, Drain and rinse well with cold water. Gently stir in 1 tablespoon of olive oil and a few shakes of salt and pepper. Let chill.

  2. Using a large bowl, mix the marinade ingredients together using a fork or whisk.

  3. Cut tomatoes in half and lightly salt.

  4. Add the tomatoes and olives to the bowl with the marinade. Stir to combine. Let marinate for 30 minutes.

  5. Add the Mozzarella cheese cubes to the marinade and stir. Let sit for about 5 mintues and then stir into the cooked spaghetti.

  6. Sprinkle pasta with freshly grated Parmesan cheese.
