Ingredients

  • 1-1/4 lb. ground beef
  • 1 small onion chopped
  • 1 package taco seasoning mix
  • 1 small can black olives
  • 1 (29 oz) can tomato sauce
  • 6 Burrito size flour tortillas
  • 2 cups cheddar Jack shredded Cheese
  • sour cream optional
  • 1 small tomato, chopped

Instructions

  1. Brown ground beef and onions until beef is cooked through.
  2. Lightly salt & pepper beef while cooking.
  3. Drain any grease and stir in the taco seasoning mix.
  4. Stir beef until seasoning is well blended and then add the tomato sauce and olives.
  5. Spray a 9" x 13" with nonstick spray and spoon about 6 tablespoons of the sauce on the bottom of the dish.
  6. Place 2 tortillas on top of sauce; overlapping. Spread more sauce on tortillas and then cheese.
  7. Repeat the layer with 2 more tortillas, sauce and cheese.
  8. Finish with another layer of tortillas and the rest of the cheese. Bake uncovered for 20 minutes. Sprinkle with chopped tomatoes.
