Meatless Spaghetti Sauce

Ingredients

  • 4 tablespoons good olive oil
  • 3-4 cloves garlic minced fine
  • 1 (28 oz) can whole San Marzano tomatoes
  • 2 tablespoons tomato paste
  • 1/4 cup fresh basil leaves chopped
  • Parmigiano-Reggiano cheese

Serve Over:

  • 1/2 lb. thin spaghetti

Instructions

  1. Start cooking the spaghetti noodles, reserve some of the water.

  2. Blend the tomatoes in a blender until nice and smooth.
  3. Using a large skillet, cook garlic in olive oil for about 5 minutes careful not to brown.
  4. Add the tomato paste and cook about about 2 minutes, stirring constantly.
  5. Salt & pepper the tomato paste while cooking
  6. Add blended tomatoes, 1/2 cup of reserved pasta water and basil to the pan.
  7. Add about 1/2 teaspoon of salt and 1/4 teaspoon black pepper.
  8. Simmer for about 15 minutes or until sauce is thickened.
